The other day I catered a lunch with empanadas and this fun cabbage salad:


Cabbage and Chile Pepper Slaw


1 1/4 c. green cabbage, thinly shredded
1/2 c. thinly sliced red onion
1 poblano pepper, thinly cut
1 carrot, peeled and shredded
1/4 c. chopped fresh cilantro
3 T. olive oil
2 T. freshly squeezed lime juice
1 T. freshly squeezed orange juice
1 t. sugar


Combine cabbage, red onion, poblano pepper, carrot and cilantro.  For dressing, in small bowl combine olive oil, lime juice, orange juice and sugar. Season with salt. Toss with slaw.
